Bake Shoppe Greatest Hits...
Every time we hold a Felt Club event, we have a Bake Shoppe table to help raise funds for future events. Vendors and friends donate amazing sweet treats, which we sell alongside water and soda pop, Felt Club button sets, and soon...silkscreened posters!
We got a blog comment a while back asking for the recipe for one of these sweet treats. Seems this commenter was a big fan of the brownies donated by the ladies of Andria Renée, so I asked for the recipe and got it! Here it is for all of you to enjoy.
Vegan Tofu Brownies
1 tub of silken soft tofu
1 1/3 cup water
1 cup vegetable oil
3 cups flour
3 cups sugar
1 1/2 cups unsweetened cocoa powder
1 tsp salt
1 tsp vanilla
1 tsp baking powder
(These proportions are for a 9"x12" pan, but if halved, good for the smaller "brownie" pan too.)
Preheat oven to 350 degrees. Oil and flour baking pan. With a mixer (or blender), puree the tofu, water and 2/3 cup of flour together into a liquid mixture. Transfer that mixture to a pot and heat on medium on the stovetop. Add in sugar and let mixture get warm for a few minutes, stirring. I think heating this helps when adding in the flour, so it just has to get 'medium' warm. You can turn off the burner after a few. In a large bowl, mix the oil, cocoa, salt, vanilla and baking powder. Add the tofu mixture into the cocoa mixture and stir. Then stir in the remainder of the flour. Mix batter is until nice and smooth. Add to baking pan and level out. Bake for 30 minutes, or until small cracks begin to appear on the surface.
